ImageLately I have really been loving “buildable meals”. One night I was craving potatoes and tacos. And voila! The Expolding Taco Potato was born!

Here’s what you’ll need:
•4 large redskin potatoes 
•1/2 lb ground beef
•1/4 cup finely chopped fresh cilantro
•1/2 pack taco seasoning
•1/4 taco sauce
•1/4 cup jalapeño 
•1/4 cup Pico de Gallo
•1/2 cup shredded Colby jack cheese
•Lettuce, Sour Cream, Scallions (to garnish)
Bake potatoes at 425 degrees for 45 minutes. Over high heat brown ground beef in large skillet. Reduce heat and combine taco sauce, taco seasoning, and cilantro. 
Remove potatoes and slice potatoes in half. Divide ground beef mixture and cheese onto each potato. Place back into oven for 10 minutes or until cheese is melted.
Add remaining ingredients and enjoy!
