Salmon Croquettes served with Scrambled Eggs and Grits.

Salmon Croquettes is one of my all time favorite Southern Comfort foods. Crispy goodness on the outside and fluffy deliciousness on the inside. You can dress them up with remoulade sauce, put them on a sandwich, or serve my favorite way with grits and scrambled eggs.

Here’s what you’ll need:

  • 2 fillets canned pink salmon,  drained and flaked
  • 1 egg, beaten
  • 2 tablespoons green peppers, diced
  • 1/2 cup bread crumbs
  • 1 teaspoon dill weed
  • 2 tablespoons onion, diced
  • 1 teaspoon ground black pepper
  • 1/4 cup corn meal
  • 1/4 cup flour
  • vegetable oil, for frying

In a bowl combine first 7 ingredients. Form mixture into patties. Heat oil in a skillet. Mix corn meal and flour in a separate bowl. Toss patties in flour mixture. Reform if necessary. Fry on each side until golden brown (About 5 minutes per side).
