If you haven’t noticed by now, I LOVE POTATOES! But what I love more is finding new ways to prepare them. I came across this fantastic approach to baked potatoes and of course I had to try it immediately! The best part about these potatoes is that you can dress them all the way up! For our dinner I added cheese, bacon, sour cream, and scallions! I have so many ideas for hasselback potatoes, you will definitely be seeing these again!
Here’s what you’ll need:
- 4 baking potatoes
- 1/2 cup extra virgin olive oil
- 2 tablespoon coarse sea salt
- 2 tablespoon granulated garlic
Preheat oven to 425 degrees. Scrub potatoes. Place potatoes in baking dish. Slice potatoes horizontally (Careful not to go all the way to the bottom of the potato). Drizzle olive oil and garlic over the potatoes. Inside each slice add sea salt. Bake for 90 minutes.
