Viva Italiano! After you master this recipe I guarantee you’ll never buy another jar of tomato sauce for your Italian dishes!

Here’s what you’ll need:
•5 ripe tomatoes
•2 tbsp olive oil
•2 tbsp butter
•3 cloves of garlic, minced
•1/4 cup dry or fresh basil (chopped)
•1 teaspoon Italian seasoning
•1 bay leaf
•1/4 cup red wine
•1/4 cup shallot, minced
•2 tbsp tomato paste

Bring a pot of water to a boil. Boil whole tomatoes in boiling water until skin starts to peel which usually takes 1 minute. Remove with slotted spoon and place in ice bath (large bowl full of ice) . Let rest until cool. Remove peel and squeeze out the seeds. Drizzle with olive oil and roast in oven for 30 minutes at 425 degrees. Chop tomatoes and puree in blender or food processor.

In a large pot over medium heat, cook shallots and garlic in oil and butter until shallots starts to soften. Pour in pureed tomatoes. Stir in basil, Italian seasoning and wine. Place bay leaf in pot. Bring to a boil, then reduce heat to low, cover and simmer 2 hours. Stir in tomato paste and simmer an additional 2 hours. Discard bay leaf and serve
