Ok, I have a confession. I don’t always make my cornbread from scratch. Often times I’m cooking dinner after a long busy day of running. And my trusty Jiffy cornbread mix is there to save the day. A nod to my semi-homemade divas!
This fabulous one-pan dinner is scrumptious and filling! Not to mention incredibly easy to make!
Here’s what you’ll need:
•1 box Jiffy Mix
•1 teaspoon of Mayonnaise
•1/2 cup Milk
•1 cup Monterey Jack cheese, shredded
•1/2 cup Jalepenos, diced
•2 cups Ground Beef, browned
•1/4 cup Onion, diced
Preheat oven to 400 degrees. Lightly grease a 9×9 inch baking pan.Place cornmeal mix in a large bowl. Stir in egg, milk, cheese, Jalepenos and diced onions. Spread 1/2 of the batter into prepared pan. Sprinkle ground beef over batter. Cover with remainding mix.Bake in preheated oven for 35 minutes.
