Happy Belated Cinco de Mayo friends! We chose to celebrate this year by having a feast at home! We enjoyed puffy tacos, Al pastor tostadas, cheesy Refried beans, Elote, and fiesta dip and chips!

After trying the Elote from MEX, I knew that I would be recreating this fabulous Mexican corn dish at home!

The greatest thing about this recipe is you can add whatever you’d like and really make it your own.

Here’s what you’ll need:

•4-6 pieces of fresh corn on the cob
•2 tbsp Mayonnaise
•1 cup Grated Parmesan
•2 tbsp Cumin
•2 tbsp Chili Powder
•Cilantro (for garnish)

Spread corn with mayonnaise. Sprinkle Parmesan cheese evenly over corn. In a small bowl, mix cumin and chili powder. Sprinkle mixture over corn and bake at 400 degrees for 15-20 minutes. Garnish with cilantro.
