To me, one of the best parts of summer is visiting carnivals! I typically only go for the elephant ears. Earlier in my pregnacy I craved them late one night. So I decided to get up head to the grocery store and make them! They are surprisingly easy to make and your family and tummy will thank you! Salmon Croquettes is one of my all time favorite Southern Comfort foods. Crispy goodness on the outside and fluffy deliciousness on the inside. You can dress them up with remoulade sauce, put them on a sandwich, or serve my favorite way with grits and scrambled eggs. Here’s what you’ll need: 2 fillets canned pink salmon, ¬†drained and flaked 1 egg, beaten 2 tablespoons green peppers, diced 1/2 cup bread crumbs 1 teaspoon dill weed 2 tablespoons onion, diced 1 teaspoon ground black pepper 1/4 cup corn meal 1/4 cup flour vegetable oil, for frying In a bowl combine first 7 ingredients. I have read everywhere that pregnant women CRAVE Pickles. I am waiting for the day I absolutely have to have one. Early on in my pregnancy I craved Cheese Fries and Ice Cream. I know, strange combination. Lately, I’ve shifted to only wanting Watermelon and Fried Chicken. How southern of me :)! I’m a firm believer that anyone can make perfect fried chicken! All you need is the right seasonings and a little bit of practice!
